How to make it

Prepared 0 of 6 steps

  1. Prepare the vegetables and beans

Dice onion and sweet pepper and mince garlic. Rinse and drain the beans. Crush tomatoes with their juices. Raw dried beans are unsuitable for this quick version.

  2. Stir-fry the vegetables

Soften the onion in oil for 5 minutes. Add pepper for 4 minutes, then garlic, cumin, paprika, chilli and oregano. Heat for 30–40 seconds without letting the spices blacken.

  3. Add the beef

Increase the heat, add mince and break up the lumps for 8–10 minutes. It should change colour throughout and start to brown, without large raw clumps, and reach 71 °C inside.

  4. Simmer the tomato base

Stir in tomato paste, then tomatoes, stock, sugar, salt and pepper. Bring to a gentle simmer and cook with the lid slightly ajar for 25 minutes, stirring from the base occasionally.

  5. Heat the beans through

Add the drained beans and simmer for 10–12 minutes more. Uncover if too wet; if already thick, do not reduce until dry. The beans should stay whole and the meat remain juicy.

  6. Let the flavours settle

Turn off the heat, cover and rest for 10 minutes. Stir and divide between bowls. Rice, sour cream, Cheddar, coriander leaves and lime are not included.

Little hint

Ground chilli varies greatly in heat. Start with the modest listed amount, especially for family meals. Never substitute raw dried beans for canned beans without cooking them thoroughly separately first.
