Hasselback potatoes
Hasselback potatoes are whole potatoes with frequent thin cuts that fan out in the oven. The butter gets between the slices, the edges toast up, while the base remains intact and holds its shape.

How to make it
Prepared 0 of 6 steps
Prepare the potatoes
Preheat the oven to 200 °C. Choose similar-sized potatoes, rinse them thoroughly and pat dry. Leave the skin on if it is thin and clean; trim any rough or damaged areas.
Make the frequent cuts
Place the potato between two wooden spoons or sticks. Cut across every 2–3 mm, not reaching the base by about 5 mm. Be especially careful at the narrow ends to avoid cutting through the potato completely.
Prepare the aromatic oil
Melt the butter on low heat, mix with olive oil. Add finely grated garlic, chopped rosemary leaves, salt, and pepper. Do not overheat the mixture to prevent the garlic from burning before baking.
Start baking
Place the potatoes in a baking dish and brush with about half of the mixture, trying to get it between the cuts. Bake for 30 minutes: the slices will gradually start to fan out. Do not pack the potatoes tightly together, or the edges won't dry properly.
Re-baste and finish
Remove the dish, distribute the remaining oil between the fanned-out slices. Return to the oven for another 35–45 minutes until the center is fully tender and the thin edges are golden and crispy.
Serve whole
Check for doneness with a knife at the base: there should be no firm raw part. Transfer with a wide spatula, keeping the fan shape intact. Cheese, bacon, sour cream, and separate green garnish are not included in this recipe.
Little hint
Uniform potato size is important for even cooking, and wooden spacers help keep the base intact. Garlic should be finely minced and protected by oil: large dry pieces on the surface easily burn.
