How to make it
Prepared 0 of 6 steps
Cook the choux base
Bring water, milk, butter, sugar and salt to the boil. Add flour all at once and stir quickly. Cook the ball over low heat for 2–3 minutes until a thin film forms on the base.
Add eggs gradually
Transfer to a bowl and cool for 5 minutes. Add lightly mixed eggs in portions until smooth, shiny and falling slowly from a spatula. Do not add all at once or the paste may spread.
Pipe the buns
Heat the oven to 200 °C. Pipe about 20 mounds, 3–4 cm across and 4 cm apart, on a lined tray. Gently flatten pointed tips with a damp finger without pressing the buns flat.
Bake and dry
Bake for 15 minutes at 200 °C, then 15–20 minutes at 180 °C until dry and golden. Keep the door closed for the first 20 minutes. Pierce the sides, rest in the switched-off oven for 5 minutes and cool completely on a rack.
Make chocolate sauce
Pour hot cream over chopped chocolate, leave for 2 minutes and stir smooth. Cool until warm; boiling sauce melts the filling instantly.
Fill just before serving
Split buns, fill each with a small scoop of ice cream and replace the tops. Add chocolate sauce and serve immediately. Whipped cream, berries and icing sugar are not included.
Little hint
Take ice cream out only when assembling and cool shells completely in advance. If serving is delayed, keep components separate; warm assembled profiteroles quickly lose shape.
