Syrniki cheese pancakes
Golden crust, tender middle and a little sour cream. A simple breakfast that's good to wake up for.

How to make it
Prepared 0 of 5 steps
Prepare the farmer's cheese
If the curd is wet, squeeze out excess whey through clean cheesecloth. Mash with a fork or rub through a sieve.
Mix the dough base
Add the egg, sugar, a pinch of salt and two-thirds of the flour. Stir until smooth. Use the remaining flour for shaping.
Shape the cheese pancakes
Sprinkle the table with flour and divide the mixture into equal pieces. Roll into balls and flatten slightly to form small pucks about 2cm thick.
Pan-fry until golden
Heat oil over medium heat. Fry the syrniki for 3-4 minutes on each side. Then reduce the heat and cover for another 3-5 minutes to cook the middle.
Add your favorite toppings
Serve warm with sour cream, berries or jam. Let the syrniki cool a little: this way they will hold their shape better.
Little hint
If the mixture spreads, first check the moisture content of the curd. A large amount of flour will make the syrniki dense.
Frequently asked questions
Why do syrniki fall apart in a frying pan?
A common cause is that the curd is too wet. Squeeze it until kneaded and place the syrniki on an already heated frying pan.
Is it possible to make syrniki without sugar?
You can omit the sugar from this recipe. For a sweet serving, add berries or jam to the prepared syrniki.
